Dr. Fred Foy Strang, Presbyterian minister, missionary, professor, speaker, and author, has long-served in Kenya, both in full-time commissioned service and in short-term ventures. He has also engaged in pastoral ministry for both small and large churches in the USA.
He served as Professor, Dean of the Peeke School of Christian Mission, and Chaplain at King University. Dr. Strang is president of the Maasai Special Projects Fund leading theological education and leadership training efforts in Africa.
Fred Foy & Cecily, a Ph.D. nurse educator, recently returned from full-time missionary service with the Antioch Partners. Both Drs. Strang teach with King University, the Presbyterian University of East Africa, and Fred Foy also teaches with Fuller and Gordon Conwell Seminaries.
Fred Foy is a scuba diver and outdoorsman, enjoys music, photography, renovating old houses (especially their off-grid mountain log cabin), working on his old boat, and barbecuing some of the best ribs you’ll ever eat.
Pastor Darice KW Dawson was born in Illinois, moved to Tarpon Springs, Florida during high school, attended Eckerd College in St. Petersburg, and later graduated from Columbia Theological Seminary in Georgia.
She was Parish Associate at The First Presbyterian Church of Palm Bay for six years, Young Adult Coordinator for Central Florida Presbytery for two years, and the Protestant Campus Minister at The Florida Institute of Technology for 24 years.
Darice and her family have been worshiping & serving at Eastminster for about 18 years, for Darice particularly in Visitation. She very much enjoys getting to know church members and offering encouragement to those in need.
Her hobbies include rescuing cats, singing, photography, and aquariums. She lives in Palm Bay with her husband, Don, (EPC A/V) and two college-aged children, Dex (Young Adult Group) and Darica (EPiC Worship Singing).
The Dawson family’s life is very much centered around this church, and we’re happy to serve where there is need.
As the Director of Business Operations, Michelle oversees day-to-day operations of the church.
She holds a Master’s of Business Administration in Corporate Finance and a Bachelor’s degree in Accounting/Business from Louisiana State University.
She and her husband David have two daughters, Jordan and Rachel, and a son, Connor. They live in Satellite Beach, FL.
Eleni is Eastminster’s Preschool Director and the Director of Children and Family Ministries. She brings a love for service, children, and intergenerational fellowship.
Eleni has been with Eastminster for 10 years starting as a Preschool Teacher before entering her role as Director.
Eleni attended University of Central Florida and studied Early Childhood Education.
She holds National Directors Credential and VPK Director Endorsement.

Teresa is the Music Director and she has served as an integral part of Eastminster’s Worship and Music program for over six years.
Teresa is a pianist and accompanist who received a Bachelor of Arts Degree in Music, and also earned a Master of Science Degree in Educational Leadership.
She served the Brevard Public Schools as an Elementary Music Specialist, and Administrator. During her teaching career, Teresa was awarded Teacher of the Year, as well as obtaining Music Demonstration School.
She was active with the Florida Elementary Music Educators Association as a facilitator and presenter.
She has accompanied the Florida Orchestra Association and the Florida Band Association at the local and state level.
David Fleenor serves as the Conductor of Sunday’s Traditional Service, Choir, handbells, and concert series.
He received a Bachelor of Music Education from the Shenandoah Conservatory of Music in Winchester, Virginia, as well as an M.M.E from Florida State University (FSU) in Tallahassee, Florida.
While pursuing his degree at FSU he taught undergraduate conducting as a graduate assistant. He taught high school band in Lee County Virginia and then band, orchestra, and chorus in Brevard County Florida. David was District Chair and an Adjudicator for the Florida Orchestra Association.
His performing ensembles consistently received superior ratings at Music Performance Assessment events. David is a member of Phi Mu Alpha, a professional music fraternity.
Nancy is the Outreach Coordinator at Eastminster. She is always ready to meet new visitors and provide them with connections within the church. A bonus is seeing the members for hugs and handshakes every weekend.
Nancy was a snowbird and visitor at EPC for six years. She knows how it feels to be welcomed so quickly by our congregation.
Nancy attended Eastern Kentucky University and graduated with a Bachelor of Science in Interior Design. Her career in retail design lasted over 25 years.
Becoming the Outreach Coordinator was just the challenge she was looking for at this stage in life.
Nancy and her husband Tony reside in Satellite Beach. They have a daughter and son living out of town.
Josh Collins has been a lifelong disciple and worshiper of Jesus since he was around twelve years of age (when he initially dedicated his life to Christ at Eastminster). He became mesmerized and captured by music, and specifically – modern church worship music – when he went to college. For the past decade he has also been working in youth ministry.
He is now the main modern worship director for the EPiC contemporary services on Saturdays and the youth & young adult director at Eastminster.
COMMUNITY, VULNERABILITY, & HONEST WORSHIP. These are the things Josh is concerned with – pertaining to the Good News of Jesus Christ. It is Josh’s sincere hope that no matter who you are, no matter where you are, no matter what the circumstance – that you might know God’s love is real. And it’s powerful. And it’s seeking you out to bless you and keep you with God forever. It causes us to bless others along the path of life.
People matter to God. God has proven that He is worthy. He is love. And more importantly – He loves us! Since Eastminster Presbyterian Church fully resonates with this heart for ministry – Josh is honored to be a part of the church!
